Banana Loaf

Banana bread is a type of bread made from mashed bananas. It is often a moist, sweet, cake-like quick bread; however there are some banana bread recipes that are traditional-style raised breads.

Banana Loaf

INGREDIENTS

  • Butter, for greasing
  • 125 g / 4 1/2 oz White self-raising flour
  • 100 g / 3 1/2 oz Light brown self-raising flour
  • 150 g / 5 1/2 oz Damerara sugar
  • Pinch of salt
  • 1/2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 2 large Ripe bananas, peeled
  • 175 ml / 6 fl oz Orange juice
  • 2 Eggs, beaten
  • 4 tbsp Rapeseed oil

INSTRUCTION

Preheat the oven to 180’C / 350’F / Gas Mark 4. Lightly grease and line a 900-g / 2 lb loaf tin.

Sift the flours, sugar, salt and the spices into a large bowl. In a separate bowl mash the bananas with the orange juice, then stir in the eggs and oil. Pour into the dry ingredients and mix well.

Spoon into the prepared tin and bake in the preheated oven for 1 hour. Test to see the if the loaf is cooked by inserting a skewer into the center. if it comes out clean, the loaf is done. If not, bake for further 10 minutes and test again.

Remove from the oven and leave to cool in the tin. Turn out the loaf, slice and serve.
