
INSTRUCTION
Preheat the oven 180’C / 350’F / Gas Mark 4, then lightly dust a baking tray with flour.
Sift the flour, baking powder and salt into a bowl. Add the sugar, eggs and orange rind and mix to a dough. Knead in the almonds.
Roll the dough onto a ball, cut in half and roll out each portion into a log about 4 cm / 1 1/2 inches in diameter. Place the logs on the prepared baking tray and then bake in the preheated oven for 10 minutes. Remove from the oven and leave to cool for 5 minutes.
Using a serrated knife, cut the logs into 1 cm / 1/2 inch thick diagonal slices. Arrange the slices on the baking tray and return to the oven for 15 minutes, or until slightly golden. Transfer to a wire rack to cool and go crisp.

- 250 g / 9 oz Plain flour, plus extra for dusting
- 1 tsp Baking powder
- Pinch of salt
- 150 g / 5 1/2 oz Golden caster sugar
- 2 Eggs, beaten
- Finely grated rind of 1 orange
- 100 g / 3 1/2 oz Whole blanched almonds, lightly toasted
